- 1kg Broccoli
- 500ml Broth
- 1 Large Onion
- 250ml Cream
- Salt, Pepper
- Shredded Cheese
- Creme Fraiche
Sometimes you just gotta eat healthy. For such situation we need an easy and fast recipe. Simply sauté some diced onion in a pot over high heat. If you top the soup with ham you can use the frying fat from it. Add the broccoli and cook it a while until it slightly softens. Pour in the broth, no matter what broth you use (Veggie, Chicken or Beef) and simmer it until the broccoli is “fork tender”.
Let it cool for a little and transfer it to a blender or blend it with an immersion blender in the pot. Blend it as fine as you want, for a creamier taste siev it through a fine mesh strainer.
Now transfer it back to the cleaned pot and reheat it on medium heat. Once it bubbles season to taste and put in the cream. Stir and fully heat through.
Ready to serve on warm plates and top with ham, cheese, creme fraiche, and ciabatta on the side.
