Tomato Mozzarella Bruschetta

Ingredients

For the Bruschetta-Mix

  • 3 Tomatoes
  • 2 Mozzarella Cheese
  • 1/2 Red Onion
  • Fresh Basil
  • 5 cloves Garlic
  • 5 tbsp. Olive Oil
  • 1 Lime
  • Salt, Pepper
  • Ciabatta or Baguette

Tomato, Basil and Mozzarella are not only good ingredients for Pizza, they are also for a lovely Bruschetta.

Dice up the Tomatoes(remove the seeds) and Mozzarella Cheese, chop Basil and the onion, combine all with the juice of a fresh Lime and season with Salt and Pepper.
Let it sit for at least one hour to enhance the flavor a bit more.

Finely crush the Garlic and mix it with olive oil.
Slice the Ciabatta or Baguette and put it on a lined baking tray and brush on the garlic oil mixture.

Bake the Ciabatta on high heat until the bread is crispy, watch out to not burn the garlic. Alternatively rub a halved clove of garlic on the bread after baking.

Bruschetta is a perfect appetizer. Also a good filling for an Omelette to breakfast.
